Honey Recipes
After reading the New York Times article about how bad sugar is for you to say nothing about High Fructose Corn Syrup I dug out my 1992 Honey cookbook:
Here is a sample with changes of course!
Honey Nut Bread
Combine - 1 cup honey, 1 cup milk and 1/4 cup butter in a saucepan to dissolve sugar and butter.
Cool and pour into a large bowl.
Sift together 2 1/2 cups flour, 2 teaspoons of cinnamon, 1 teaspoon nutmeg, 1 teaspoon baking soda and 1/2 teaspoon salt. Add wet to dry and fold in 3/4 cup chopped walnuts and 1/2 cup currants* (or another dried fruit or different nut). Let stand for 20 minutes and then bake in 2 small loaf pans for 40-50 mins.
*I really like currants better than raisins as they don't drag the mix down and end on the bottom. Plump them in a jar with sherry.
